5 Spice Chicken "Fried Rice" (Heart of Palm) Stuffed Pepper

Have you been having the best summer ever? Eating and drinking all the things? Living your best life? I sure hope so! If you’re anything like me, you indulge in amazing food, but appreciate healthy dishes to balance it all too!

Heart of Palm has been the most underrated vegetable until recently. it’s a vegetable harvested from the inner core and growing bud of certain palm trees. I buy them in a can and often include them in my salads. In the last year or so, I’ve been seeing them pop up all over the grocery store in pasta and rice form! My mind was blown and I immediately began cooking with it.

For this low-carb, high volume delicious recipe (yields 4 servings), you will need:

  • Hearts of Palm Fried Rice

    • 1 Package (9oz) Hearts of Palm White Rice - I used Natural Heaven

    • 4 Cups of Vegetable Mix - I used whatever was in my fridge:

      • 2 cups cabbage

      • 1 cup zucchini

      • 1/2 cup shredded carrots

      • 1/2 cup diced onions

    • 4 Red Bell Peppers

    • 2 Cloves garlic

    • 1/4 Cup Coco Aminos

    • 1 Tablespoon Sesame Oil

    • 2 tablespoons Coconut Oil

  • 5 Spice Chicken

    • 2 Chicken Breasts

    • 1 Tablespoon Chinese 5 Spice

    • 1 Tablespoon Garlic Powder

    • 1 Tablespoon Onion Powder

    • 1 Tablespoon White Pepper

    • 3 tablespoons Coconut Oil

Directions:

  • Fried Rice

    • Cut the tops off of your bell peppers and remove the seeds

    • Dice the tops of your bell peppers to use for the Fried Rice

    • Dice all of your remaining vegetables and place them in 2 bowls -

      • 1 bowl for firm/thick vegetables first (onions, bell pepper and zucchini

      • 1 bowl for thin vegetables (cabbage, shredded carrots, garlic)

    • In a pan on medium-high heat, add coconut oil

    • Add in your more firm/thick vegetables, saute for 3 minutes

    • Add in your remaining thin vegetables, saute for 3 minutes

    • Add in entire package of Hearts of Palm White Rice

    • Add in coco aminos and sesame oil, stir well until combined, saute for 5 minutes

    • Turn off heat

  • 5 Spice Chicken

    • In a bowl, cube your chicken breasts

    • Marinate your chicken breasts with

      • 1 tablespoon coocnut oil

      • 1 tablespoon Chinese 5 spice

      • 1 tablespoon garlic powder

      • 1 tablespoon onion powder

      • 1 tablespoon white pepper

    • In a pan on medium-high heat, add 2 tablespoons of coconut oil

    • Add in marinated chicken, allow sear, 3 minutes

    • Flip chicken, cook for 3 minutes

    • Turn off heat

    • Add chicken into rice mixture

    • Mix until combined

  • Bell Pepper

    • Stuff your bell pepper in 4 layers: fried rice, chicken, fried rice, chicken

    • Roast your bell pepper in the oven at 375 for 10 minutes

    • Remove from oven

    • Add in 5th layer of fried rice

    • Sprinkle with parsley for garnish and chili oil
