Air Fryer Pickles and Artichokes with Garlic Aioli

I can say with confidence that my life did not begin until an air fryer came into my life! Its technological progression coupled with the transition to a multi-functional kitchen appliance is a game changer. Being able to eat your favorite foods without feeling heavy afterwards is a true gift.

One of my favorite things to air fry lately are vegetables! Here is my recipe for shockingly crispy, delicious air fryer pickles and artichokes, with a garlic aioli sauce!

Ingredients:

  • 1 16 oz jar of pickles (hamburger dill chips)

  • 1 14 oz can of artichoke quarters (soaked in water, unseasoned/marinated)

  • 1 8 oz container Panko Bread Crumbs

  • 1 cup all purpose flour

  • 1.25 cup water

  • 1 tablespoon Italian seasoning

  • 1 tsp onion powder

  • Salt and pepper to taste

Air Fryer Pickles and Artichokes Instructions:

  1. Drain the pickles and artichokes

  2. Spread the dry pickles and artichokes on a plate and pat dry, do not begin the batter process until everything is completely dry

  3. In a bowl, mix the all purpose flour, Italian seasoning, and black pepper

  4. Add in 1.25 cup of water, and mix with a fork or whisk, place aside

  5. Grab a plate, and pour out 1 cup of panko bread crumbs

  6. A few pickles at a time, drop them into your batter. Make sure the pickle is fully coated and lift with a fork, letting any excess drip

  7. Gently place the pickles one at a time on the panko bread crumbs and coat both sides

  8. Spread the pickles in your air fryer basket, making sure none of the pickles are touching

  9. Air fry at 350 for 12 minutes, 6 minutes per side

  10. Add 1 tsp of onion powder, salt and pepper evenly on the dried artichoke quarters

  11. A few quarters at a time, drop the artichokes into the remaining batter you used for the pickles. Make sure the pickle is fully coated and lift with a fork, letting any excess drip

  12. Gently place the artichokes one at a time on the panko bread crumbs and coat both sides

  13. Spread the artichokes in your air fryer basket, making sure none of the artichokes are touching

  14. Air fry at 350 for 14 minutes, 7 minutes per side

Garlic Aioli Ingredients:

  • 1 cup light or vegan mayonaise

  • Juice of 1/2 of a lemon

  • 3 cloves minced garlic or 1 tablespoon of garlic powder

  • Salt and pepper to taste

Garlic Aioli Instructions:

  1. In a medium sized bowl, add 1 cup of your choice of mayonaise. Personally, I prefer a less rich mayonaise, so I like to go with a light olive oil or vegan kind

  2. Squeeze the juice of half of a large lemon

  3. Add 3 cloves of finely minced garlic. If raw garlic seems a bit overwhelming, use garlic powder Instead!

  4. Add salt and pepper to taste, a teaspoon each to start

  5. Whisk for about 15 seconds until fully combined, or use a small food processor if desired
